Starbucks Pumpkin Loaf

Lately, I have been OBSESSED with the pumpkin loaf cake from Starbucks. With pumpkin season coming to an end soon I wanted to make my own version of these that I can enjoy year-round.

Starbucks Pumpkin Loaf Copycat Recipe

  • 3 eggs
  • 1/4 cup oil
  • 1/2 cup milk
  • 1/4 tsp vanilla
  • 1 can pumpkin puree (15oz)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tbsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups flour


  • In a bowl whisk your eggs until combined
  • Add in all the wet ingredients and mix together
  • Add in the cinnamon, pumpkin spice, vanilla, and salt. Mix together
  • Add in one can of pumpkin purée (15 ounces)
  • Add in the brown and regular sugar and mix together until smooth
  • Slowly incorporate the flour into the mixture
  • Pour the mixture into the parchment paper lined pans and sprinkle some pumpkin seeds on top
  • Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean
