Lately, I have been OBSESSED with the pumpkin loaf cake from Starbucks. With pumpkin season coming to an end soon I wanted to make my own version of these that I can enjoy year-round.

Starbucks Pumpkin Loaf Copycat Recipe

Ingredients

  • 3 eggs
  • 1/4 cup oil
  • 1/2 cup milk
  • 1/4 tsp vanilla
  • 1 can pumpkin puree 15oz
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 tbsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups flour

Instructions

  1. In a bowl whisk your eggs until combined
  2. Add in all the wet ingredients and mix together
  3. Add in the cinnamon, pumpkin spice, vanilla, and salt. Mix together
  4. Add in one can of pumpkin purée (15 ounces)
  5. Add in the brown and regular sugar and mix together until smooth
  6. Slowly incorporate the flour into the mixture
  7. Pour the mixture into the parchment paper lined pans and sprinkle some pumpkin seeds on top
  8. Bake at 350 degrees for 25 minutes or until a toothpick inserted in the center comes out clean
