Date Cake

Ingredients

Date Mixture

  • 1 1/2 cup water
  • 1 cup of dates pitted
  • 1 tsp baking soda

Cake Mixture

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 2 cups self-rising flour
  • 1/4 tsp salt

Caramel Sauce

  • 1 stick butter
  • 1 2/3 cup brown sugar
  • 1 1/2 cup heavy cream
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1/4 tsp nutmeg

Instructions

Cake Batter

  1. Soak the dates in the boiling water and baking soda for about 10 minutes
  2. Once they are soaked, add them to a blender and blend until smooth.
  3. In a large mixing bowl, whisk together the eggs, butter, sugars, salt, baking powder, cinnamon, cardamom, and vanilla until smooth
  4. Alternate between adding in the date mixture and the self-rising flour
  5. Add the cake batter to a greased pan and bake at 350 until fully cooked. Test by inserting a toothpick into the center of the cake, it should come out clean.
  6. Allow the cake to cool for 10 minutes before pouring the caramel sauce on the cake.

Caramel Sauce

  1. In a medium-sized pot melt butter over medium heat
  2. Add in the brown sugar, salt, and nutmeg and incorporate them into the melted butter
  3. Add in the vanilla extract
  4. Add in the heavy cream and whisk until completely smooth
  5. Increase the heat and allow the mixture to come to a light boil
  6. Once it thickens and becomes a dark brown color, remove it from the heat and allow it to cool down slightly
